ACTIONS AND PROGRAMS

SUSTAINABLE FISHING

At Chablé we partnered with different sustainable fisheries that adapt to the reproductive rate of fish to maintain a balance and ensure the survival of all species. Our chefs and restaurants are part the movement “Pesca con Futuro” that aims to spread a message of sustainability in fish and aquaculture production in Mexico, keeping aquatic populations at a healthy level.

FARM TO TABLE

We have more than 100 Ka’anche’s at both properties, traditional mayan gardens where we recreate harvesting techniques that have not been used in over a century. We also have production beds on the ground, equivalent to 20 square meters for each bed.
Products that are produced in our Ka’anche’s: radish, coriander, oregano, basil, citronella, stevia, chives, cherry tomato, habañero pepper, among others.
We produce our own mayonnaise, ice cream and sorbets, salty and sweet bread, tortillas, jams, sauces, granola, mole, amaranth, chocolate truffles and crowbars.

WILDLIFE CONSERVATION

Conserving wildlife is at heart of our mission.
We focus on protecting populations of white-tailed deer, armadillos, melipona beer and coatis.

VEGETATION & MANGROVE PRESERVATION

Starting with a design that has a symbiotic relationship with its environment, Chablé Hotels were sustainably built to serve as an extension of the surrounding landscapes and culture.<br
Chablé Maroma, which is nestled seaside, was constructed using elements from the peninsula and supporting some columns made from local zapote and chaca tree trunks. Beach vegetation was preserved. All these minimize the impact on the terrain, taking care of the mangroves and groundwater table of the region. We installed 4 permanent flood level monitoring stations, to provide the best conditions for the mangrove conservation.

PLASTIC FREE

We eliminated use of plastic bottles, saving more than 7,000 a month.

CLEAN ENERGY

On 2021, we installed solar panels at Chablé Yucatán, which generate 60% of the energy we currently use.

WATER WASTE

At Chablé Maroma, we have our own water recycling plant, a fully automated standalone unit that enables recycling of process water by treating the water in a cost-efficient manner.

CULTURE & TRADITIONS

A very important Chablé pillar is to preserve and promote our ancient cultures. At both Chablé properties you can enjoy wellness ceremonies & temazcal. The word temazcal means “steam house” and this is a ritual based on one of the oldest forms of medicine where the physical, mental and spiritual levels come together.

At Chablé Yucatán you can enjoy our mayan cuisine, a space where ancient culture and civilization flow and will amaze you.
You can also enjoy every Monday our “Jarana Yucateca” a traditional mayan dance.

CORAL RESTORATION

Chablé Maroma partners with OCEANUS A.C. to restore the Caribbean Mexican reef off the coast of Punta Maroma / Hotel Chablé Maroma. They transplant 650 live colonies each year and invite guests to adopt a coral by leaving their wishes on a cement base, which is later placed in the sea. Once OCEANUS A.C. has placed them in the sea, the guest will receive a photo of their base, ready to adopt a coral.
