The mastermind behind Quintonil, an award-winning restaurant in México, this young Mexican chef has conceived a unique take on contemporary Mexican cuisine. Jorge Vallejo has made waves around the world for his deep understanding and love of the regional ingredients and dishes. Drawing from this knowledge, Vallejo created unforgettable dishes that bring out the best of the flavors of Yucatán.
Since the opening of Quintonil in 2012, Vallejo has seen his restaurant on The World’s 50 Best Restaurants list for many years in a row. Before this, the chef had stints at world-class kitchens like Noma, Pujol, Hotel St. Regis, as well as working as Corporate Chef for Grupo Habita.
Quiroz’s love for food was born from watching his family around the kitchen when he was little. After obtaining a scholarship, he was able to pursue his dream to become a chef. His first experiences working in a restaurant made him fall in love with the creative possibilities of food. Captivated by his passion during his time as an intern at Pujol, one of México City’s top restaurants, Vallejo offered him a position at the prestigious Hotel Habita.
His talent has taken him to renowned kitchens in both Mexico and the U.S, including that of Quintonil. Quiroz also spent some time in Spain as an apprentice to Chef Quique Dacosta, proud bearer of three Michelin stars. Now, he’s in charge of presenting our guests with a unique culinary experience every day.

Their name comes from the Mayan words ka’an (sky) and (ché) stick and could be defined as a raised bed. Made of local woods and built without artificial elements, each bed is filled with organic soil and seeds harvested through traditional Mayan methods by Chable’s resident Mayan horticulturist. Chablé’s farm-to-table dining experience is based on the fruits, vegetables, and herbs that are sourced essentially from this organic garden.
